Elise with the 2021 CaberNat and the 2021 Pinot Noir Pét Nat. Every few weeks, we open up one of each wine to check on the fermentation progress. It’s a hard job, but someone’s gotta do it 😎
Early notes on these wines:
2021 Pinot Noir Pét Nat: Rose Quartz in color, light bodied with perfectly balanced acidity and bright fruit flavors like raspberry, watermelon and strawberry. The delicate finish on this wine is dreamy. This wine is dry with nice carbonation. I anticipate this will be our best Pinot noir Pét Nat yet.
2021 CaberNat: The color is electric red⚡️it smells like Hawaiian Punch and tastes like a cherry jolly rancher. It’s still actively fermenting, so there’s a kiss of sweetness in this wine, but I do expect it to go fully dry by the end of winter. There’s also a tannic component to this wine on the back end, which is to be expected from a Cabernet Sauvignon grape and makes her taste a bit wild! We’re planning a dosage for this wine – and we’re toying with the idea of adding a splash of brandy – dosage trials are in progress.
We’ll continue to keep you in the loop as these wines continue to develop. And we anticipate a spring 2022 release of these two wines! 🥂🥂🥂

Post-harvest silence descends upon a fog shrouded Valley early a late October morning.
Seventy-six days of delivering the vine’s yield completed, the mood of the crew is quiet satisfaction. Now garner the olives and then a winter’s rest.
A different, slower paced harvest.
Mist gives way to a brilliant sun. Low on the horizon reflecting the season’s brilliantly diversely colored leaves.
The day and conversation warms, punctuated by the soft dropping of fruit into buckets.
Talk of holidays.
Of loved ones long not seen.
Thanks given for this earth’s abundance. The life it sustains.
